Next up is a fun recipe, that reminds me of that fun scientific project we all had to try as kids, where you mix baking soda and vinegar.  This is a candy recipe, and you get to eat the results.  This is also known as angel food candy, as it somehow resembles angel food cake, I suppose.

  • 1 C sugar
  • 1 C corn syrup
  • 1 Tbs vinager
  • 2 Tbs baking soda
  • dipping chocolate

Combine sugar, syrup and vinegar in a heavy sauce pan.  Cook at medium heat, and stir until the sugar dissolves.  Using a candy thermometer, watch for the candy to heat to 300.

While waiting for the candy to heat, grease a jelly roll pan.  Once the candy hits 300, remove from heat.  Stir in baking soda using a wooden spoon.  Pour immediately into the pan - do not stir.

Let it cool for an hour.  Then, break into pieces.  Melt chocolate, and dip each piece in, and dry on wax paper.
