Quin-What?

In attempt to have lots of brain food around during my comp exams (Start time, 9am tomorrow), I stocked up on lots of fun things.  Right now I am eating an amazing Quinoa (Keen-wa, don't you feel smarter already?) Stir Fry. Make this today, and feel your IQ jump.  Also, this stuff is awesome for protein and is really good for you. I found this recipe on my favorite iPhone app,  Epicurious. Quinoa Stir-Fry

  • 3/4 cup quinoa, rinsed
  • 1/2 teaspoon salt, divided
  • 1 tablespoon vegetable oil
  • 1 small carrot, thinly sliced
  • 1 medium red bell pepper, cored, seeded and chopped
  • 2 teaspoons grated ginger
  • 1 clove garlic, sliced
  • 1 small red chile, chopped (optional)
  • 2 cups snow peas, trimmed
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 4 ounces grilled chicken breast, chopped
  • 2 scallions, chopped
  • 1/2 cup cilantro
  • 1 tablespoon soy sauce
  • Rinse the quinoa first. Then, put the quinoa in a small saucepan with 3/4 cup water and 1/4 teaspoon salt. Bring to a boil, then reduce heat to low. Cover and cook, undisturbed, until quinoa absorbs water, about 15 minutes.Remove from heat, fluff with a fork and leave uncovered.

    While you are doing that, grill your chicken on your Forman or whatever.  I marinated mine in teriyaki first, then tossed it on my indoor grill, this thing I was forced to purchase in Vegas, because real grills would burn down most of the city. Once the chicken is ready, chop it roughly into stir-fry sized pieces.

    While the chicken is grilling and the quinoa is quinoa-ing, heat up your wok and add a little oil.  Toss in the carrots - I cheated and used baby carrots.  I also added in asparagus because I love it.  Add in the bell pepper, ginger, garlic and chile, if desired; cook, stirring frequently, about 2 minutes. Add peas and any other veggies, and sprinkle

    with salt and pepper and cook, stirring frequently.  Once this stuff is cooked up, remove the veggies from the wok, and set aside.

    Add the quinoa to the wok, and toss in the beaten egg.  Ahhh, it's like super healthy fried rice!  Add back in the veggies, chicken and all the rest of the ingredients.  Let all the flavors mix around for a bit, then douse in soy sauce, and serve!

    Yummy!

    Update: Do not try to eat a lot of this.  I'm super full from a small bowl, which is unfortunate because it's delicious!
